Working alongside Forest Coffee, the Bayter family continues to push boundaries in fermentation, flavour development and transparency — producing coffees that redefine what Colombian filter coffee can be.
Processing: Designed for Maximum Flavour Punch
This lot earns its “Punch” name through a meticulous, high‑impact natural anaerobic process:
- 12‑hour pre‑fermentation in plastic tanks to spark early fruit development
- 24‑hour anaerobic fermentation in sealed tanks to intensify deep, complex fruit notes
- Two‑stage drying:4 days in a mechanical silo for controlled moisture reduction
- 20 days sun‑drying on raised beds for clarity and consistency
- 30‑day stabilisation in GrainPro bags to harmonise and round out the flavour profile
The result is a filter coffee with remarkable structure, intensity and balance.
