Grown at the farm in Villa Betulia, each coffee cherry is meticulously harvested at peak ripeness, floated and hand-sorted.  The cherries are then exposed to 30 hours of underwater fermentation before they are delicately pulped, gently washed, and carefully dried for optimal moisture content.
